Don't make the letter fancy for the sake of fancy. Plain general English is good. You don't want the other party to read funny and weird English.

If I were you, i would say " very much i appreciate all that you have done for me"you can write this in the beginning of the letter, and in the end, say " once again, thank you for your valuable time and attention"
